I mised getting a picture of these.  They look like sunflowers.
These plants were about 8' talll and yeilded a lot of tubers.


Jerusalem Artichoke tubers

These can be eaten raw or cooked any way you would cook a potato.  Raw, they are crisp and have a sweet nutty flavor.  They are high in insulin and fructose.  Cooked they tast similar to Globe artichokes.
